Have you tried mixing your own flour? I only use spelt and my own mixed flour and it works great.  I haven't had to give up any of the baked goods that I love, or compromise too much on bread.  If you look for Ezekial bread (this may be a Canadian thing) it is gluten free and pretty delicious.  My other suggestion for pasta (I tried making my own, which wasn't so bad using spelt flour) is rice pasta.  Kind of weird sometimes, but the brown rice pasta is delicious! I was really disappointed with pre-mixed gluten free flour and other pre-mixed gluten free flour for baked goods such as brownies. When it comes to breads, I tried a tapioca loaf, but it was like a cruton and fell apart when I put peanut butter on it. It also tasted stale. I’ll try your suggestion with Ezekial bread if I can find it :) And I stocked up on brown rice pasta and Quinoa pasta, but just haven’t had a chance to use it yet. I also got some gluten free raviolis at Costco the other day because I happened to stumble upon them. Every suggestion makes my life a little easier! Thanks!&lt;/p&gt;

I got: &lt;/p&gt;
&lt;p&gt;Glutino gluten free pretzels: They&amp;#8217;re amazing. They taste like real pretzels&amp;#8230; I&amp;#8217;m addicted. &lt;/p&gt;
&lt;p&gt;Schar chocolate hazelnut bars: they&amp;#8217;re like oversized cookies. Not great for your body but really tasty. &lt;/p&gt;
&lt;p&gt;Glutino GF breakfast bars: they&amp;#8217;re okay. Pretty much nutrigrain bars but gluten free. Not all that great&amp;#8230; certainly not worth the 6 bucks. &lt;/p&gt;
&lt;p&gt;And for later, &lt;/p&gt;
&lt;p&gt;Envirokidz gorilla munch&lt;/p&gt;
&lt;p&gt;Schar pasta. &lt;/p&gt;

&lt;p&gt;Now, I hate Kaiser (my insurance). I&amp;#8217;ve told many people that if I had a serious health problem like a heart attack, to take me to another non kaiser hospital because I wouldn&amp;#8217;t trust Kaiser with my safety. Last time i went to see a gyno at Kaiser, they told me that I could get HPV from a toilet seat just to try to convince me to get the HPV shot&amp;#8230;. &lt;/p&gt;
&lt;p&gt;This makes me really reluctant to go, but I have to because I need a note from the doctor saying that I have this problem so that my professor can give me full credit on my homework assignment. &lt;/p&gt;
&lt;p&gt;Urgh. &lt;/p&gt;

The gluten free flour I bought was too doughy and not the right consistency to make it through the noodle cutter. I’ve had a really weak stomach my whole life and I’m not really sure of the cause of it. I was diagnosed with IBS years ago, which is often a misdiagnoses of a gluten allergy. I have thyroid deficiencies, Crohns disease, and other intestinal issues in my family history so my mother told me that I should try a gluten free diet for a month and see if it improves my over all well being. So far, it has. I haven’t really experimented with eating other products with barley or rye, which are considered gluten, because it’s working so well that I don’t want to purposely cause a reaction in my stomach. That’s why I’m just choosing to eliminate gluten all together. I got three hours of sleep last night and then had class at 7:30 am.&lt;/p&gt;
&lt;p&gt;When I finished for the day and got home at 11am, even though I was starvvvving, I forced myself to go upstairs and sleep.&lt;/p&gt;
&lt;p&gt;I finally regained consciousness at about 3pm and my loving, wonderful boyfriend made me some sauteed potatoes and eggs, which were delicious. (I always thought eggs didn&amp;#8217;t agree with my system. I&amp;#8217;m learning that it was never the eggs, it was the bread that I ate them with.)&lt;/p&gt;
&lt;p&gt;I haven&amp;#8217;t really eaten since then, but my boyfriend&amp;#8217;s friend is coming over at 9ish to make me hand made raviolis, with gluten free flour, specially for me.&lt;/p&gt;
&lt;p&gt;Its been a good day. I&amp;#8217;ll let you guys know how it turns out; I&amp;#8217;m expecting it to be delicious!&lt;/p&gt;

&lt;p&gt;P.S. I rediscovered whole foods today. WHY HAVE I FORGOTTEN HOW WONDERFUL THIS PLACE IS!?! It&amp;#8217;s like 19x better than Trader Joes. We found gluten free flour and brownies so easily! If you&amp;#8217;re looking for somewhere to shop, go to Whole foods. We cook a lot of potatoes, especially in the morning. Some seasoned, sauteed potatoes are filling and they’re delicious. They’re also bland enough to not upset my stomach in the morning. Look into eating more fish. It’s my easy go to meal. &lt;p&gt;I feel horrible now. So tired, fatigued, bloated, stupid, and irritated. Eating has become a challenge. &lt;/p&gt;
&lt;p&gt;I&amp;#8217;m ending my crappy food day with some ice cream because I know I&amp;#8217;ll never get to eat it again for a long time. &lt;/p&gt;
&lt;p&gt;Tomorrow, I&amp;#8217;ll start fresh and eat so much better! &lt;/p&gt;
